Devil's Breakfast Snack

- 12 Eggs
- 3 T. Baking Soda (optional)
- Cold water & Ice (optional)
- 3 T. Asiago & Roasted Garlic Mix
- 1/3 c. Mayonnaise
- 1-3 T. Heavy Cream
- Sharp Cheddar or Asiago Cheese
- Bacon Strips
- Bloody Mary Salt
- Comets Tail Pepper, Cracked or Ground
- 12 Tooth picks or appetizer skewers (optional)
Directions
- Bacon
- Heat a skillet over medium
- Cut each bacon slice into 3 pieces, if your bacon is fatty and shrinks a lot cut them in half instead
- Lay bacon out in a single non-overlapping layer
- Cook about 3 min and flip cooking another 3-4 minutes depending on crispness desired
- Lay cooked bacon on paper towels to drain, cover with paper towel
- Eggs
- Put the eggs in a sauce pan fill with cold water until they are covered by about an inch of water (add baking soda to water if desired)
- Set heat pan over high heat, boil eggs for 8 - 10 minutes START timing when they start to boil not before!
- While eggs are cooking put cold water and ice in a bowl
- Remove eggs from pan and place in the bowl of cold water and ice, let cool for 1 min.
- Peel eggs, slice off a small sliver on one long-side of the egg to create a flat spot for to sit on
- Split the eggs long-ways, and gently scoop out the yolk into a bowl
- Set the whites aside making sure to keep the bottoms (with the flat side) separate from the tops
- Filling

- Assemble
- Divide the filling mixture between the top and bottom halves of the eggs, don't over fill
- Season the bottom halves with the Bloody Marry Salt
- Top the bottom eggs with cheese and bacon slices
- Add the top egg, sprinkle with the Comets Tail Cracked or Ground Peppercorns
- Skewer egg through all layers
