Elderberry Ice Cream



  • Mix River Hills Harvest Pure Elderberry Juice and honey until well mixed to make a syrup.
  • Pour the cream and milk into a heavy pot and put it over a medium-high flame, Add elderberry syrup.
  • Bring the mixture to about 160°F, which is steaming but not simmering. Lower the heat.
  • In a medium bowl beat egg yolks
  • While whisking, slowly ladle 2 ladles of the cream mixture into the eggs to temper the eggs
  • While whisking, add the tempered egg mixture to the cream mixture in the pot, mix well.
  • Bring the mixture to 160°F, then take it off the heat. Don't let it simmer.
  • Let cool for 15 minutes. Then put in refrigerator to chill thoroughly. Overnight gets the best results.
  • Pour into your ice cream machine and mix according to the ice cream machine's instructions.
